There is tuna, and there is tuna. Ortiz’s Bonito del Norte white tuna, preserved in olive oil with sea salt, is the best we’ve had. With a sizeable bit of fish in each jar, it is a little meal, ready for eating when you need it. In addition to excellent tuna salad, we like to use this in Salad Nicoise, and as a key ingredient in tonnato spread. Spain.
