Made with cow’s milk on Cobb Hill Farm in Hartland, Vermont, Ascutney Mountain (aged 6-8 months) has a sweet, nutty flavor. With an alpine-style natural rind, it is made in the Swiss Appenzeller style, but we find that it is sweeter and has less bite than a traditional Appenzeller cheese.
